THE INGREDIENTS
- Chicken Nibbles/Wings (500g will be sufficient to serve 3 – 4 – increase accordingly based on your expected number of guests)
- Olive oil (to coat chicken and act as an adhesive)
- Your preferred rub or seasoning (we have used Greenwood Barbecues Universal rub)
INSTRUCTIONS
- Pre-heat your smoker to 300f (150c).
- Place chicken into a large mixing bowl and coat with oil.
- Toss or stir through chicken to ensure an even coating of olive oil on each piece.
- Coat with your chosen seasoning (Greenwood Barbecues Universal rub) to taste. It is recommended lightly season, then toss or stir through and season again to ensure sufficient coverage.
- Place in smoker for 20-25 mins. Utilising a meat thermometer, check the chicken at 20 mins, by inserting the probe into the thickest part of the chicken, ensuring the probe is not touching any bone, as this may interfere with the reading. The chicken is cooked once it reaches an internal temperature of 165f (73c).
- Remove and serve. Optionally, if you prefer a crispier skin to your chicken, at this point, increase the temperature of your smoker to 350f (175c) and cook for a further 5 – 10 mins (or until you reach your desired level of crispiness).
