Smoked Jalapeno Poppers

THE INGREDIENTS
- x10 Jalapenos
- 250g cream cheese
- 100g Shredded cheese
- 2 tablespoons rub of choice (we used KC Butt Spice)
- 10 rashers bacon
INSTRUCTIONS
- Preheat your smoker to 275°F or 135°C.
- Slice the jalapeños in half lengthwise. Scrape out any seeds and ribs with a small spoon or paring knife.
- In a medium bowl, mix together the cream cheese, grated cheese, and Rub
- Spoon the filling into each jalapeño half. Wrap each with a half-slice of bacon, securing with a toothpick. Arrange the jalapeño poppers on trivet & convection tray
- Place trivet on the grill grates. Close the lid and smoke for 30 minutes
- Increase the grill temperature to 300℉ or 191°C. Close the lid and cook until the bacon is cooked to your desired doneness, about 30 minutes more.
