Chicken and Chorizo Wraps
THE INGREDIENTS
Serves 4-6
600g chicken (thighs or tenders work best)
Rub/seasoning of your choice
2 chorizo sausages, halved lengthways
2-3 Capsicum – different colours, cut into cheeks
Microwave rice – flavoured or plain
210g can chopped tomatoes
Wraps
1 medium onion
INSTRUCTIONS
Lightly oil chicken and generously add seasoning.
Grill chicken, chorizo, and capsicum until cooked.
Cool slightly and chop roughly.
Meanwhile, soften onion in pan and microwave the rice.
Add chicken mix, rice, and tinned tomato to pan and cook for five minutes, stirring regularly.
Generously fill wraps, fold, and serve.
Notes
Use any boneless chicken, even supermarket roast chicken.
Use seasonings you like – we used Hardcore Carnivore Meatchelada.
Any flavoured, plain, or pre-cooked rice will do.
