In this guide we will be using heat beads. Your first step is to place the heat beads around the outside of the cooking grate.

The approximate burn time will be around 10 hours but play around yourself with different quantities.

Place the lid on for around 20 minutes until your temperature stabilizes.
Add a piece of foil folded over to protect the bottom of the meat from scorching.

Adjust your top vent for temperature control but leave the bottom vent fully open.

Rotate the vent and thermometer (if you have one) to the opposite side of the snake to get a good heat reading.

Check regularly to make sure that the temperature is in your desired range and adjust using the vents at the top of the kettle.
