These smoked almonds are so easy, affordable and most importantly delicious you won’t be able to stop making them!

Smoked Almonds are the perfect winter snack to go alongside some good whiskey and good company, and also make a delicious, crunchy addition to salads.

These nuts are versatile – pop some in your kids school lunch for a healthy snack they’ll actually eat. A jar of these smoked almonds makes a delicious gift, so make enough to give some to friends and neighbours next time you’re in need of a gift that everyone will love! Simply fill mason jars with the cooled nuts, add a nice ribbon and a label, and you’ve got a rustic gift that’s definitely Instagram worthy!

Ingredients

  • 2 cups of whole, raw almonds
  • ¼ cup of  butter, melted
  • 1 tablespoon of salt
  • 2 teaspoons of white sugar
  • ½ teaspoon of onion powder
  • ½ teaspoon of celery powder or curry powder
  • Light flavoured wood chips like beech or apple, or your preferred flavour of wood chips for smoking

Directions

Step 1 Preheat your gas smoker to low, about 105-135°C.

Step 2 Melt the butter in a small saucepan.

Step 3 Add the almonds to the pan and stir to coat them thoroughly.

Step 4 Remove from the heat and cover.

Step 5 Place the onion powder, celery powder (or curry powder), salt and sugar in a spice grinder and grind until it forms a fine powder.

Step 6 Drain the almonds, coat them with the powder and spread them in a flat layer onto a tray that is lined with baking paper.

Step 7 Place inside the gas smoker and smoke for 30-60 minutes.

Step 8 Remove and cool before storing in an air tight container.

The almonds will be soft when they are hot but will become crunchy when they cool.
